Banana Cookie Recipe Goodness

This banana cookie recipe is a go-to and I must share. It’s one of my gluten free staples and it’s so easy to make up. Over the years I’ve learned I have many, many gluten and dairy intolerances and this recipe allows me to use foods that work for me. You can easily adjust to what works for you too!

These cookies are great for breakfast or a snack and can easily be frozen to save for later. They are a perfect protein punch and great pre or post workout as well. This is a quick batch recipe but you can make a big batch too, depending on how many you need. It is great because it works best on bananas that are going bad and are a little mushier. Does anyone else buy bananas and never use them all up? You will now!

I love this recipe so much that I now always have ingredients on hand so I can make this up on the fly. The ingredients it requires are gluten free as well and are good for a multitude of things. I’ll explain after the recipe share.

Banana Cookie Recipe

  • 1 c. gluten free granola (can use oats or other granola)
  • 1 c. dried fruit or nuts or chocolate chips (I use dried cranberries or cherries and sometimes do a mix of a few or all options)
  • 2 ripe bananas

Preheat oven to 350. Peel bananas and mash with a fork. Add granola and fruit / nut / chocolate combo and mix together. Spoon onto lined baking sheet (as large or as small as you want) and bake for 15 minutes. Allow to cool before putting in container.

Other notes:

  • I have thought about adding protein power for an extra punch. Will have to report back on that or let me know if you try it!
  • Dried fruit and nuts are great to have on hand. I use them in chicken salad, homemade quinoa oatmeal, a dairy free yogurt topping, and make up an easy trail mix, so many great uses.
  • Semi-sweet chocolate chips are my go-to for a little something sweet by themselves or a great topping for dairy free yogurt, add to trail mix, or sometimes dairy free ice cream. I keep mine in my freezer, always.
  • Gluten free granola is something I always have on hand as well, for yogurt topping, snack, breakfast, etc. Costco, Aldi, Trader Joe’s are all great places to buy from.

Hope you enjoy this treat! I love these types of recipes where the ingredients are as close to the food source as possible. It uses all ingredients you can pronounce and know where they originated. After all, God made the plants for our medicine and the fruit for our food…anything outside of this, was it ever intended??
